Moroccan Roasted Sweet Potato Soup
- 800 g sweet potato, peeled and cut into 1 inch chunks
- 1 brown onion, peeled and quartered
- 3 garlic cloves, peeled
- 2 large carrots, thickly sliced
- Maple syrup, drizzle
- 0.25 teaspoons Ground Chilli
- 1 tablespoon coriander seeds, toasted and ground
- 2 teaspoons cumin seeds, toasted and ground
- Rice Bran Oil, spray
- 1 litre chicken stock
- 400 grams Chickpeas, drained and rinsed
- 1 tablespoon lemon juice
- salt & freshly ground black pepper

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Preheat the oven 180C. Place sweet potatos, onion and garlic in a roasting tray. Drizzle with maple syrup and toss together so they are all coated. Sprinkle with chilli, coriander and cumin. Roast, turning occasionally for 40 minutes or until tender and turning golden.
In the last 20 minutes add stock and carrots to TM bowl and cook 20 mins / 100C / speed 1.5 / MC off - simmering basket on lid.
Remove vegetables from the oven and transfer to TM bowl.
Add chickpeas and cook 10 min / 100C / speed 1.5 / MC on.
Blend 10 secs / speed 8 / MC on.
Add 1 Tbsp lemon juice and season to taste with salt and freshly ground black pepper. Stir 10 secs / speed 4 / MC on.
Serve with some crusty bread.
