Sweet Potato Soup

  • 1/2 red capsicum
  • 1/2 brown onion
  • 2 spring onions
  • 1-2 cloves fresh peeled garlic
  • Sm bunch Fresh herbs
  • 1 tablespoon olive oil
  • 2 tablespoons TM Veg Stock Concentrate
  • 600 grams water
  • 1 carrot roughly chopped
  • 1 Leek White Part Only Cut into 5 Pieces
  • 200 grams Peeled Sweet Potatoes Roughly Chopped
  • 2-3 tablespoons sour cream

Recipe's preparation

  1. Chop red caps, onion, spring onion, fresh herbs and garlic on speed 5 for 8 secs, scrape down sides and chop for further 3 secs

    Add Olive Oil and sautée for 3 mins Gentle stir setting 

    Add water and stock paste 

    Add remaining vegetables to basket and insert the basket into the bowl

    Cook on Varoma Temerature for 24 mins speed 3-4

    Once cooked carefully tip the basket of vegetables into the water stock mixture, replace mc and carefully turn dial upto speed 9 for 50 secs, remove mc and add 2-3 tablespoons of sour cream, replace mc and carefully turn dial up to speed 9 for a further 10 secs

    Remove lid and pour into bowls and enjoy.

By adding extra water this will thin out your soup as it is quite thick
