Thick Smokey Pumpkin Soup

Ingredients

4 portion(s)

  • 4 --- Shortcut bacon rashes, Roughly chopped
  • 1 onion, Cut in 1/4s
  • 15 grams oilve, (1 tbsp)
  • 1000 grams pumpkin, Chopped (skin left on)
  • 2 Medium potatoes, Approx 380g chopped skin left on
  • 1 tbsp vegetable stock
  • 500 grams water
  • 100 grams Cooking cream

Recipe's preparation

  1. 1.Put Onion cut in 1/4s and Bacon roughly chopped in the Thermomix Bowl and chop speed 4 for 5 seconds

    2. scrap down sides if required add olive oil and Gentle stir setting 5 min on 100degrees mc off

    3. add  half the pumpkin and potato and chop speed 5 for 5 second, and other half and chop repeat add stock and water and cook for 20 minutes at 100° on speed 1. Mc on

    4.Blend for 1 min  by slowly going from speed 1 to speed 9. - repeat till at desired consistancy. ( I did this in 2 lots)

    5. add cream and stir on speed 3 for 7 seconds or until mixed through.

    6. Serve Hot and Salt and pepper to taste

    Thank you, a very nice soup. Added a knob of peperoni salami cut into chunks when I added the pumpkin and potato, giving the soup a little bit of bite. Delicious. Into my favs!

    Thankyou for sharing! This soup is amazing. I was so unsure about leaving the skin on, but tried it and WOW it works! I am now on the 3rd batch and decided to try it with a few seeds in it this time too tmrc_emoticons.)
