- 1 onion large, Peeled and quartered.
- 2 cloves garlic, Peeled
- 1 tablespoon EVOO (extra virgin olive oil)
- 2 cans peeled tomato
- 1 Large handful fresh basil leaves
- 2 teaspoons Oregano (fresh)
- 2 tablespoons TM Veggie Stock
- 1 teaspoon sugar raw, Or any other sugar you like
- 480 g water
- 250 g Greek yoghurt
- 110 g Tasty or mature cheddar cheese, Grated or previously chopped in TM
- salt and pepper to taste

Recipe's preparation
1. Chop onion and galic cloves, 10 secs, speed 6 until finely chopped.
2. Add oil and cook for 3 mins, temp 100, speed 1. Scrape down bowl and cook for further 2 mins.
3. Add peeled tomatoes including juice, water, Veggie Stock, basil, oregano and sugar. Cook for 15 mins, temp 90 speed 3.
4. Add yoghurt and cheese. Cook for 2 mins, temp 90' speed 3 to allow cheese to melt and mix through.
5. Blend soup, 1 min, speed 6, or longer depending on how smooth you'd like it. Adjust salt and pepper to taste and serve with a sprinkle of chopped parsley, and a sprinkle of extra grated cheese if desired.

Tip
If you like it spicy, add some chilli in with the onion and garlic at the beginning of the recipe.

i have made this soup. Few times now and love it every time. I have used half tinned and half fresh home grown tomatoes, home grown basil too. both times I havent had the creme fraiche, first time just left it out, second time added cream. Both were delicious. I am a very new thermomix user and found this simple to make.

Very nice soup. The whole family loved it and it made enough to freeze some for a rainy, less organised day.
Can I suggest reorganising a couple of things to make the recipe easier to use? Listing the ingredients in order of use would make it easier, and also putting the cheese grating as step one and then 'set aside'.

Good idea. My 8 yr old will eat any soup as long as its not too thick and you add little pastas, so we tend to do the thinner ones. Little pastas work well with this one. Glad you enjoyed it.

Thank you for this lovely simple recipe. I had a glut of fresh tomatoes in my fridge and decided to use them. Really lovely to eat. Would like to try a little celery with the onion and garlic the next time I do this. Superb and well done as is. HIghly recommended. Served with crumbled goats cheese and croutons on top - looked lovely as well as tasked lovely.
