  • 1 bunch green tops of spring onions, roughly chopped
  • 20 g olive oil
  • 1 large zucchini, washed and roughly chopped
  • 1 large potato, peeled and roughly chopped
  • 1 Large carrot, peeld and roughly chopped
  • 1 small piece of broccoli, washed and roughly chopped
  • 1 heaped tbsp vegetable stock concentrate
  • 650 g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Vegetable Soup
  1. Place spring onion tops into Mixingbowl and chop for 3 sec on speed 6. Add oil and saute on Varoma for 3 min on speed 1.

    Add zucchini, potato, carrot, broccoli, vegetable stock concentrate, chili paste and water.

    Cook on 100 degrees C for 15 min on speed 1.

    Puree for 1 min on speed 9.

    Transfer into Thermo Server or Soup Terrine.

    You may wish to add some sour creme or creme fraiche.

    Serve with  crusty bread or bread rolls and a glass of Sauvignon Blanc.
