Weight Watching Pumpkin Soup

  • 1 onion, peeled and quartered
  • 1 teaspoon ground ginger
  • 1/2 teaspoon chilli powder
  • 500 grams pumpkin, peeled and roughly cubed
  • 2 carrots, washed and roughly chopped
  • 1 tablespoon TM veg stock
  • 500 g water
  • 1 tablespoon olive oil

Recipe's preparation

    Weight Watching Pumpkin Soup
  1. Place onion into TM bowl and chop for 5 seconds on speed 7.

    2.       Add oil and sauté for 2 minutes  at 100C on speed 1.

    3.       Add spices to bowl and cook for 1 minute at 100C on speed 1 to release the flavours.

    4.       Add pumpkin and carrot. Chop for 15 seconds  on speed 7.

    5.       Add stock, water and salt and cook for 20 minutes at 100C on speed 1.

    6.       Blend for 15-20 seconds by slowly going from speed 1 to speed 9.

  • only the olive oil would need

    only the olive oil would need to be counted...the rest would be free... So if you'd used all your "points" could still eat this without much damage.to the weight watching.

  • I used fresh ginger and chili

    I used fresh ginger and chili plus a Clive of garlic. It was still a bit bland for me so I added some ground Cumin. 

    Served with fresh coriander and a dollop of sour cream. Yum yum

    The recipe doesn't say how much oil so I just used 1 tablespoon. It also forgets to indicate when to add the water (at step 5 presumably)
