  • 2 onions, peeled, cut into halves
  • 20 grams butter or olive oil
  • 1 teaspoon salt
  • 2 bay leaf
  • 1 litre chicken stock
  • 2 cans cannelloni beans 400g, Rinsed
  • 50 grams pancetta (bacon), Pan fried until crisp
  • Extra evoo to drizzle over soup when serving

Recipe's preparation

    Soup
  1. Chop onion in Thermomix bowl, spd4/4sec

    scrape down sides of bowl and add butter, salt and bay leaf and sauté 3min/100 degrees/spd 1/rev.

    add chicken stock and both cans of beans and cook for 12mins/100 degrees/spd1/rev

    Then cook for a further 8mins/90 degrees/spd1/reverse.

    remove bay leaves and slowly take dial up to spd9/60sec to purée.

    pour into bowls and drizzle with EVOO, top with crispy pancetta shards.
