  • 1 onion, peeled and halved
  • 2 cloves garlic
  • 30 g olive oil
  • 750 g small zucchini, roughly chopped
  • 2 tablespoons TM vegetable stock concentrate
  • 600 g water
  • 1/4 bunch Basil leaves

Recipe's preparation

    Zucchini and Basil Soup
  1. 1.     . Place onion and garlic into TM bowl and chop for 5 seconds on speed 7.

    2.       Add oil  and sauté for 3 minutes  at 100C on speed 1.

    3.       Add zucchini and chop for 5-8 seconds on speed 6.

    4.      Add the TM vegetable stock and water  and cook for 10minutes at

    100C on speed 1.

    5.      Add basil leaves.

    6.      Blend to desired consistency  by slowly going from speed 1  to

    speed 9 fo 20 seconds.

Tip

Garnish with some goat's cheese or feta.

    This was delicious - I added 2!celery sticks with the onion &'garlic and also put some frozen peas in with the zucchini and some grated Parmesan just before blitzing - yum! Thanks for sharing

    I left out  the onions, and put in 40g of Parmesan , 40g of butter and 125ml cream at the end. Gave it a lovely creamy texture and flavour.  Also used 4 cloves of garlic...

    Great recipe. Lots zucchinis in garden at moment, good to be able to use them up!  Have modified little give more flavor, Found above recipe little bland! First added just aniseed herd along with basil as above, lots better. Then made Zucchini & tomatoe soup with added herbs salt & pepper. Recipe as above added @ 120 to 150g tomatoes (zucchini + tomatoes together added up to 750g) Used combination herbs, parsley, basil, coriander, aniseed. Yum!

    Today made it with coconut oil, Organic good quality one, (instead of olive oil) Herbs used parsley,basil,coriander,tyme &marjarum. 160g tomatoes. Coconut oil gave it diff flavor again, very yummy. Herbs all fresh out of garden.

    Thanks for this great recipe again.

    P.S Goes nice with a dollop of  jelna sour cream or macro organic yogurt on top.

    This is a great way to use up all the zucchinis from our garden! I added 2 tablespoons of sour cream at the end to give it some tang and creaminess.
