Zucchini Leek soup Failsafe



4 portion(s)


  • 50 grams leek
  • 1 Garlic (optional)
  • 500 grams zucchini cubed
  • 500 grams water
  • 1 tablespoon Vegetable stock paste
  • 10 grams oil
  • 40 grams Cashews

Recipe's preparation

  1. 1. Add leek and garilc to bowl. Chop 3 seconds speed 5. Scrape down sides

    2. Add zucchini, water, stock, cook 15mins/100 degrees/speed 1

    3. Add oil and cashews and blend 1 minute gradually increaseing speed to 9

    4. Adjust seasoning to taste

Add more cashews if you want a thicker soup and garnish with your choice of herb

    Lovely and creamy,  I also added butterbeans after blending for extra protein.
