Easy Peasy Smashed Pea & Zucchinni

Ingredients

2 portion(s)

Thermomix Filling

  • 300 grams peas, (fresh or frozen)
  • 1 piece zucchinni chopped

Additional Ingredients

Additional to serve

  • 2 tablespoons ricotta cheese
  • 2 slices lemon
  • 1 teaspoon cracked black pepper
  • 2 slices proscuitto, (optional)

Recipe's preparation

    Smashed Pea and Zucchini
  1. Place 300g peas and 1 x roughly choppped zucchinni into the thermomix on VAROMA for 10 minutes Counter-clockwise operation Gentle stir setting.

     

     

  2. Meanwhile, if you would like to serve with proscutto place 2 pieces of this under a grill while the peas and zuchinni is cooking.

  3. When Varoma has finished,  mix for 5 SECONDS on SPEED 4.

  4. Divide the mixture by 2 and plate up with 1 tablespoon of ricotta on top and serve with optional proscutto, lemon and pepper.

  5. This is an easy DELICIOUS fresh tasting meal.  Also Try serving on Ciabatta or other bread for a wonderful breakfast.  ENJOY

    I love this recipe.  It is so great on top of cornfritters and topped with a poached egg and a drizzle of pomegranate molassess and even a sprinkling of dukkah.  It's my "cafe" breakfast/brunch/light dinner.  Sometimes I add a little bit of diced onion if Im in the mood but as is - YUM.  Thank you for posting.
