Coconut Jam Drops - Thermobexta

  • 70 grams raw sugar
  • 130 grams unsalted butter, softened
  • 1 egg
  • 1 teaspoons vanilla extract
  • 170 grams plain flour
  • 80 grams dessicated coconut
  • 1 teaspoons baking powder
  • 1 pinches salt
  • 100 grams Jam, any flavour

Recipe's preparation

  1. Pre-heat oven to 160°C fan forced. Line 2 trays with baking paper.
    Place sugar in mixer bowl. Mill 10 seconds/speed 9. Scrape down bowl.
    Add butter. Beat 30 seconds/speed 4. Scrape down bowl. Repeat.
    Add egg and vanilla. Beat 5 seconds/speed 4. Scrape
    down bowl. Repeat. The mixture may appear curdled here, don't worry, it will come back together as you continue.
    Add flour, coconut, baking powder and salt. Mix 10 seconds/speed 3. Scrape down bowl. Repeat.
    Roll tablespoons of the mixture into 24 balls. Place on the prepared trays, allowing 3cm between each. Using your thumb or a floured 0.25 tsp measuring spoon, press a deep dent in the middle of each biscuit. Fill each dent with about half a teaspoon of jam. Bake for 17-20 minutes, until golden brown. Allow biscuits to cool completely on the trays.
