Bacon and Zucchini Slice

  • 100-150 grams cheese
  • 1 large onion, Peeled and quartered
  • 3 Rashers of Bacon, Add corn if vegetarian
  • 1 Capsicum, Deseeded and roughly chopped
  • 2 carrots, Roughly chopped
  • 2 Zucchinis, Roughly chopped
  • 50 grams oil
  • 5 eggs
  • 180 grams polenta
  • salt and pepper to taste

Recipe's preparation

    Method:
  1. Place cheese in the bowl and grate for 8 seconds, speed 8. Set aside.

     

     

  2. To the bowl, add the zucchini, carrots and capsicum. Chop for 8 seconds, speed 4 then set aside (in a separate bowl than you have the cheese in).

     

     

  3. Place onion and bacon in bowl and process for 4 seconds on speed 6. Scrape down the sides of the bowl and add oil and saute for 1 minute at 100 degrees on speed 1.

     

  4. Add in rest of the ingredients including your cheese and zucchini mix and combine for 45 seconds, Counter-clockwise operation, speed 3-4. Season according to taste. 

     

     

  5. Pour into a lined greased dish and cook for 1 hour, in an oven that you have preheated to 160c (fan forced).

     

  6. Slice and serve hot or cold.

You can play around with the ingredients if you don't have particular vegetables etc.

    This is a really good receipe for kids - weaning babies wanting to eat something with their hands and hungry kids needing a healthy snack that isn't full or sugar.

    I added a layer of grated cheese on top of the mixture just because we love cheese. I will try it with various vegetables for sure.
