Ingredients

Rice Balls

  • 200 g Jasmine rice
  • 200 g Kent pumpkin, 1 cm small cubes
  • Half brown onion
  • 1 clove garlic
  • 1 centimetre ginger
  • Half carrot
  • Quarter Zuchhini
  • Quarter red capsicum
  • 100 g frozen peas & corn
  • 10 g chia seeds
  • 10 g walnuts
  • Handful Thermomix grated cheese
  • 1 tablespoon tmx stock
  • 30 g olive oil

Recipe's preparation

    STEP 1
  1. ~ Place onion,garlic, ginger, carrot, zuchinni, capsicum, chia seeds and walnuts into bowl and chop 3 Secs/Speed 7.

    ~ Scrap down sides of bowl with spatula and add olive oil and frozen peas and corn. Saute 3 Mins/ Varoma/Speed 1.

    ~ Set aside into large mixing bowl and stir in the TMX stock

  2. STEP 2
  3. ~ Without washing bowl add 800ml water and the Thermomix basket with 200 grams of rinsed jasmin rice.

    ~ Place the cubed pumpkin spread evenly in varoma bowl

    ~ Cook for 15 mins/Varoma/Speed 2.

    ~ While rice is cooking preheat oven to 180degrees, prepare a large baking tray with baking paper, and a small plate with sesame seeds

  4. ~When cooked set rice aside to cool and drain the water out of bowl.

    ~Place pumpkin in bowl and mix 5 secs/Speed 5.

    ~ Place rice, pumpkin and cheese into the mixing bowl to combine with the onion vegetable mixture and mix well to combine and knead together.

    ~ once cooled enough taste to see if seasoned enough to your taste and roll into small balls and roll in sesame seeds

    ~ Place on baking tray and bake for 30-40 mins or until golden

    ~ Let cool. Can be eaten warm or cold.

Tip

These rice balls are very versatile. You can literally change all the ingredients around to sort your own tastes/whats in your fridge or pantry. Mine are never the same. You can use meat, sweet potato, different nuts, chia seeds or no chia seeds, cheese or no cheese or roll in bread crumbs instead of sesame seeds, use curry powder or different herbs for flavourings. The options are endless. Fabulous for school lunch boxes packed with a little container of thermomix tomato sauce.
