Banana and Apple Bread

  • 130 g unsalted butter, softened
  • 1 apple, Gala, coarsely chopped
  • 350 g ripe bananas, cut into pieces
  • 50 g caster sugar
  • 2 eggs
  • 220 g Gluten free plain flour
  • 2 teaspoons Gluten Free Baking Powder
  • 1 pinches salt
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 90 g full cream milk
  • 10 g lemon juice
  • 2 teaspoons vanilla extract

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180 deg.
  2. Grease a loaf pan and set aside.
  3. Place apples (cored but skin on) in mixer bowl and chop 3 sec / speed 6. Scrape down mixer bowl.
  4. Add bananas to mixer bowl and mash 5 sec / speed 6. Scrape down mixer bowl.
  5. Add butter and caster sugar and mix 20 sec / speed 4. Scrape down mixer bowl.
  6. Add eggs and mix 10 sec / speed 4. Scrape down mixer bowl.
  7. Add plain flour, baking powder, salt, bicarbonate of soda, cinnamon, nutmeg, milk, lemon juice and vanilla extract and combine 20 sec / speed 4.
  8. Pour into prepared loaf tin and bake for 50 minutes or until a wooden skewer comes out clean from the centre of the bread.
  9. Allow the bread to cool in the tin for 10-30 minutes, then place on a wire rack to cool.
  10. Once cool, slice and enjoy!

Tip

I use gluten free plain flour for this bread but it does work with normal plain flour as well.

Feel free to leave the sugar out of this recipe if preferred as it still tastes amazing.
