- 2 onions, peeled, halved
- 20 gram olive oil
- 20 gram Butter
- 20 gram balsamic vinegar
- 30 g brown sugar
- 1/2 Capsicum, sliced thin and small
- 8 eggs
- 100 gram feta, chopped into small cubes
- 3 tsp Dijon mustard
- 1 tsp paprika
- Salt and pepper, To taste
- Filo Pastry Sheets
- Olive Oil Spray or Melted Butter
Place onions into bowl and chop 3sec/sp7.
Add Olive Oil, Butter, Balsamic and Brown Sugar, Cook 45 mins/100C//.
Preheat oven, 180C.
To the caramelised onions, add capsicum and saute for a further 15mins/Varoma//.
Crack eggs into bowl and whisk, 5mins/sp4/.
While the eggs are whisking, add onion mix, feta, mustard, paprkia and salt and pepper through the hole in the lid.
To prepare the filo pastry cups, layer 4 sheets on top of each other, making sure that olive oil or melted butter are sprayed/brushed on in between each sheet.
Cut the layered sheets into the size require - i.e. the size of your tray, muffin tins, etc.
Grease the baking tray or muffin tin and line them with the layered filo.
Scoop the egg filling into the filo cups and bake for approximately 25 minutes.
Serve and enjoy!
Accessories you need
You could use pre-prepared Caramelised Onion if time did not permit, or if already on hand.
Filo pastry can be omitted to be into a fritata.
Filo pastry can be swapped with a savoury shortcrust pastry, as well.
Other ingredients can be added, such as mushrooms, pieces of bacon, etc.
