Chicken and Veg Sausage Rolls

Ingredients

12 portion(s)

  • 400 grams chicken thigh fillets, roughly chopped
  • 1 leek, white part only, roughly chopped
  • 1 Carrot, peeled and roughly chopped
  • 4 sprigs parsley leaves, fresh
  • 250 grams breadcrumbs (can be made in Thermomix)
  • 2 eggs
  • 3 sheets puff pastry, ready-made (or make in themomix
  • 1 tsp curry powder
  • salt/pepper (to taste)

Recipe's preparation

    Sausage Rolls
  1. 1. Put onion, leek, carrot  and parsley into mixing bowl and chop 3 sec/speed 7 or until desired consitency has been reached. Scrape down sides of the bowl.

    2. Put chicken thighs into mixing bowl and mince 8-20 seconds/speed 6 -7 or until desired consistency is achieved.

    3. Put all of the remaining ingredients except for an egg and the pastry into the bowl.  Mix 20 seconds/speed 1 or until really well combined.   4. Make a line of filling down the middle of the Puff Pastry and roll up.  Slice the sausage rolls on an angle. Crack remaining egg into a bowl and beat with a fork for a few seconds. Use a pastry brush to moisten the tops of the sausage rolls with the beaten egg.   5. Place on a baking tray, lined with baking paper. Bake at 180 degrees for 25 minutes or until golden brown. 

    Recipe Tips and Hints:

    Delete the curry powder and reduce the carrot for a low salicylate recipe.

    Substitue other vegetables or seasonings for different flavours. 

    I didn't add salt, pepper and halved the curry powder on my first attempt and felt they the sausage rolls really needed tomato sauce for flavour.  I will add salt, pepper, dried chives and garlic next time.

    • Uncooked sausage rolls can be frozen.  Seal with plastic wrap and they will be good in the freezer for up to three months.
    • Sausage rolls are best eaten hot on the day they are made.

    These where yummy and so easy to make, my husband gobbled them down. I think I might add some more curry powder or even some veggie stock just to give a bit more flavor Lol

    These are awesome, sometimes i saute some onion or leek and garlic off first. Also adding zuchinni (peel of bitter green skin or just fool the kids with no colour) I also add a tablespoon of Thermomix vegetable stock for a boost of flavour which my kids love tmrc_emoticons.p thank you

    Winner recipe in our family! The boys love em! It makes enough for 2 meals. I freeze half of them and I can reheat them on a busy night! Very easy to make and taste great!

    I made these last night - completely unplanned tmrc_emoticons.) I loved how everything was so easy to do and the flavours were great however I did make some changes to match what I had available.  I used onion instead of leek and almond meal instead of bread crumbs.  I also added chilli, garlic, pumpkin, peas and corn and I cooked for 45mins (brushed with milk not egg). thanks!!
