Chickpea "Meatloaf"

"Meatloaf"

  • 800 g canned chickpeas (3.5 cupps cooked), rinsed & drained
  • 2 cloves garlic
  • 2 tbsp linseeds or flaxseeds
  • 2 tbsp olive oil
  • 1/4 tsp black pepper, ground
  • 2 stalks celery, coarsely chopped
  • 2 tbsp soy sauce or tamari
  • 1 onion, peeled & halved
  • 1 tsp smoked paprika, ground
  • 2 eggs
  • 2 carrots, coarsely chopped
  • 3 tablespoon Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce
  • 2 cube panko breadcrumbs

Glaze

  • 4 tbsp tomato paste
  • 2 tbsp Maple syrup
  • 2 tbsp apple cider vinegar

Recipe's preparation

  1. Preheat oven to 180 degrees C.  Lightly oil a loaf pan.

  2. Measure linseeds into TM bowl and mill 10 seconds speed 9.  Set aside with breadcrumbs

  3. Place celery, carrot, onion and garlic in bowl and chop 3 seconds speed 7

  4. Add in chickpeas, oil, pepper, soy sauce, paprika, eggs, Worcestershire sauce, tomato paste and soy sauce and pulse on Turbo 3 x 1 seconds until finely chopped

  5. Tip this mixture into the bowl with the breadcrumbs and linseed meal, and mix well by hand to combine

  6. Press mixture firmly into loaf pan and bake 30 minutes

  7. Meanwhile mix all the glaze ingredients for 5 seconds speed 4 (or can just mix by hand with a fork)

  8. Tip glaze over loaf pan and bake a further 30 minutes

  9. Set aside ~10 minutes to cool slightly before turning out and slicing up to serve

    Oh I love this! Next time I will add more garlic and some mixed herbs but this is a fantastic base recipe. Thank you for sharing!
