  • 80-120 g leek, white and/or green pieces
  • 2 carrots small
  • 50-100 g broccoli, (or other Vegetables of choice)
  • 1 zucchini, roughly chopped
  • 1 red capsicum, quartered, deseeded
  • 1 can corn kernels, drained
  • 400 g coconut milk, approx
  • 5 eggs
  • 95 g GF plain flour
  • 1 tsp Italian dried herbs
  • 2 tsp turmeric, more is better if you like it
  • 1 tsp cumin
  • salt, to taste
  • black pepper, to taste
  • 12-18 cherry tomatoes, thinly sliced (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Pre-heat oven to 180°C. Spray mini muffin tins or slice tray with olive oil spray (Silicon forms are easiest).

     

    Put leek and carrot into TMX bowl and chop for 3 seconds, speed 6.

    Add broccoli, zucchini and capsicum to TMX bowl and chop on speed 5, 3 seconds. 

    Add corn kernels, coconut milk, eggs, GF flour, herbs, turmeric, cumin, salt and pepper.

    Blend on REVERSE, speed 4 for 15 seconds.

     

     

    Pour into baking dish or muffin tray and top with sliced tomatoes.

     

    Bake in the oven 45-55 mins or until set and browned.

    Makes approx 72 muffins. I make 48 mini muffins and a slice tray (because that is what I own). A slice will take a little longer to cook and is best to cool before cutting.

Tip

This is a very runny recipe, but it does set in the oven.

Great for picnics. Serve warm or cold as finger food at parties.

Freezes well: pop into a lunch box straight from the freezer - thawed by recess.

 

Super healthy with all the vegetables. If you need to hide your veggies, just blend a little longer. I like to challenge people to identify all my vegetables.

 

I have TM5, but this recipe volume should be fine in TM31.
