- 260 g Milk
- 90 g olive oil
- 2 eggs
- 1/2 tsp salt, heaped
- 1/4 tsp TM Veg Stock Concentrate, heaped
- 100 g feta cheese, crumbled
- 140 g Frozen Chopped Spinach, thawed
- 160 g butternut pumpkin, grated

Recipe's preparation
Grease a muffin pan and preheat oven to 180 degrees celcius.
Place the flour, milk, oil, eggs, salt and stock in the Thermomix bowl and combine on speed 4 for approximately 20 seconds.
Add the feta, spinach and pumpkin and mix speed 4, "Counter-clockwise operation" for 20 seconds.
Spoon mixture into muffin pan and bake for 20 minutes or until muffins spring back.
Leave to cool for 10 minutes before transferring to a wire rack.

Made these for my one year old but all the family like them did as suggested and grated the pumpkin for 5 secs speed 7 then set aside. Also used half the amount of oil, tasty cheese instead of feta and added some corn kernels too.

I chopped the pumpkin 5s, sp 7 beforehand then removed from bowl. Cooked a packet of bacon pieces for 5mins at 100C before adding flour etc. Then added a small tin of corn at the final step with chopped fresh spinach.
I only had a small amout of feta so used grated tasty cheese instead, then used the feta to top the muffins before baking. Maybe next time I will reduce the oil as others have suggested.

Didn't have any feta so used tasty plus some parmesan instead. Threw a few sun dried tomatoes in also. They were really delicious.

These are pretty tasty, I made them for my toddler. Used 100g tasty cheese instead and added corn, decreased spinach. Had to cook for about 28 mins. Only used 65g oil.
Hi, I did make some changes
Hi, I did make some changes as well, but they look great and yummy. I had no pumkin and used carrot instead and I put some pepitas on top. I also have no milk so used greek joghurt mixed with water to get the 260g fluid. Some curry and tumeric. Next time I will try them with sundried tomatoes and olives and leave something else out.

Yummo!!! I added a little extra stock as well as some chopped ham and a sprinkle of cayenne pepper. I also used buttermilk as I had some that needed to be used. After putting into muffin tray I sprinkled with some mozerella that also needed using up!

Delish!! These will be on regular rotation in our house. I made these in muffin papers which I won't do again as Ye stuck to the papers, next time just an oiled tin. I also had enough to make a small loaf - it turned out really well.

Loved this recipe - looking at other comments, I added half fresh spinach/rocket & a zucchini, some spices (cumin & turmeric + mixed herbs). I also didn't have enough milk, so added some Greek yoghurt - tasted great but did need some extra cooking time. Next time I wouldn't add the salt as the feta is salty enough.

Pumpkin, Spinach and Feta
I was looking for a healthy recipe for muffins I can have for breakfast on the run and these are great! I used 40g wheatgerm, 80g self raising flour (what I had left!) and 180g wholemeal self raising and reduced the oil to 50g and they turned out really well. Made about 15 muffins and took 22 mins in my oven. Next time I might hand stir in the spinach and feta to see what they're like with bigger chunks. Thanks for sharing the recipe

Not made savoury muffins before so nothing to compare to, however if I make again, I'd definitely incorporate some more flavour as mine were a bit bland. I chopped the pumpkin in the thermo first and set aside. Followed the rest of the recipe and my muffins turned out bright green! Thought this would appeal to the kids as novilty muffins, but unfortunately they didn't like them. Always good to try new things though...

These are really delicious, grated the pumpkin in the TM first (as recommended by others), didn't wash the bowl and no problems with that, and used fresh chopped baby spinach. Perfect for the lunchbox of a daughter who refuses to take sandwiches to school, and healthy too! Will become a favourite I'm sure, yum!

These were easy to make with good texture. I agree with some of the previous comments, they did lack a little flavour. Next time I'll add a little more salt, some spring onions and maybe some bacon. I substituted the olive oil for coconut oil and reduced the amount to 50g and grated the pumpkin. Perfect for lunchboxes- thanks.

HEALTHY SNACK - thanks for all the suggestions. I used baby spinach (roughly chopped) instead of frozen spinach. Grated the pumpkin first - 15 seconds Speed 7, then set aside. Continued on with recipe (using a little less oil), leaving remnants of pumpkin in the TM which didn't seem to hurt. Final mix was 40secs, instead of 20, due to the baby spinach. Enjoyed by all.

Pretty good. Wish the steps had of included grating the pumpkin!!! Moist and rather tasty thanks for sharing. This batch makes a lot of muffins about 1 and a half dozen. I am going to try freezing mine.

P-Cat you sure can grate your pumpkin in Thermie. Prepare as normal and place into the bowl, grate on sp 4-5 for a few seconds. Check to see if it is grated enough, if not grate again for a second or two. It will only take a few seconds to grate, anymore and it will be slush
