Recipe's preparation

Preheat oven to 180’C.
Line 22cm square tin with baking paper.
Place zucchini in TM bowl and grate for 5 seconds on speed 4. Place into simmering basket and drain over sink.
Place carrots, onion and herbs in TM bowl and chop for 5 seconds on speed 5. Add eggs and mix 5 seconds on speed 4.
Squeeze liquid from zucchini by pressing down firmly on contents in basket. Discard liquid.
Add zucchini to egg mixture then add the flour. Mix for 20 seconds on Reverse
speed 4.
Pour into prepared tin. Sprinkle crumbled feta over the top.
Bake 45 mins (Make sure it is quite bouncy on top).
Let set 10 mins and then cool on a wire rack.

Serve with a salad for dinner or leftovers make great lunches.

You could top with sliced tomatoes or halved cherry tomatoes prior to baking

Add a commentMy husband really enjoyed
My husband really enjoyed this slice which was easy to prepare. I added frozen corn at step 5 as I didn't have any carrots. I think I'll add grated cheese into the mix next time to add more flavour - and there will definitely be a next time. The slice went well with avocado on the side and a relish.
