Ingredients

Zucchini and Veg Slice

  • 150 grams Cheddar cheese, roughly chopped
  • 400 grams zucchini, roughly chopped
  • 230 grams carrots, roughly chopped
  • 1 onion or leek, roughly chopped
  • Baby Spinach Leaves, a handful
  • 4-5 sprigs parsley
  • 100 grams bacon or ham (optional), roughly chopped
  • 5 eggs
  • 95 grams vegetable or rice bran oil
  • 150 grams Self Raising Flour
  • salt and pepper to taste

Recipe's preparation

  1. 1. Preheat oven to 180C. Grease a ceramic or glass lasagne dish.

     

    2. Place cheddar cheese in the TM bowl and grate for 5 secs / speed 6.  Set aside.

     

    3. Place zucchini, onion/leek and bacon/ham in the TM bowl and chop for 4-5 seconds / speed 5.  Set aside with cheese.

     

    4. Place carrots, spinach and parsley in the TM bowl and chop for 4 seconds / speed 5. If needed, scrape down the sides and chop for a further couple of seconds. Set aside with the other veggies and cheese. 

     

    5. Add SR flour, oil, eggs and salt/pepper to the TM bowl and mix for 20 seconds / speed 4.

     

    6. Return veggie mix to the TM bowl and combine all ingredients for 30-40 seconds / speed 3 on reverse Counter-clockwise operation"Counter-clockwise operation" .

     

    7. Pour mixture into the prepared dish and bake for approximately 40 minutes or until slightly browned.

     

    Serve warm or cold!

Tip

These are great as a main dish served with salad, as a snack and for lunchboxes! Can also be frozen in portions. Great as toddler/kids finger food and packs plenty of veggies into a serve.

    Would have given 5 stars but for some reason rc won't let me? This is one of my go to recipes. Always great. Sons' love it. BTW it is too big to mix properly in the TM bowl so I just put it all into a big bowl and mix it together. So much easier.

    This was the easiest zucchini slice I've ever made. I used coconut oil instead and reduced the quantity a little and it still turned out great.
