Ingredients

Zucchini Slice

  • 100 g Cheese (cheddar or parmesan)
  • 200 g zucchini
  • 1-2 carrots
  • 1 onion (halved)
  • 55 g Oil (of choice)
  • 1-2 sprigs Herbs of your choice(Optional), (Parsley, Basil, Chives, Rosemary etc)
  • 1 clove Garlic (optional)
  • 100 g S.R. Flour
  • 3 eggs
  • salt and pepper to taste, (If adding the Veggie stock paste omit the extra salt)
  • 1 tbsp TM veggie stock paste (optional)
  • 2 Rashers of Bacon (fried till crispy, chopped)

Recipe's preparation

  1. Pre-heat fan forced oven to 180 deg C

    Place Cheese into bowl to grate 5-10sec/speed 9. Transfer to a small dish to be used later.

    Grate Zucchini, Carrots, Onion, Herbs and optional Garlic 5-8sec/speed6.

    Then add all other ingredients and mix 5-8sec/speed6 till just combined.

    Place mix into a 23cmx23cm greased tin, or muffins tins.

    Bake for 20-30 mins.

    Allow to cool for 5-10 mins before taking out of the tin.

    Can serve hot or cold/chilled.

Tip

This is for TM31 and TM5.

Great for kids lunch boxes, and picnics. Great to freeze.

    Brilliant recipe! I did it without the bacon, baked them in a mini muffin tray and the kids loved it - big win, happy mum tmrc_emoticons.)

  • This was my first thermomix

    This was my first thermomix zucchini slice. I used ham instead of bacon, and did the second mix in reverse to minimise further chopping, but even though I did the first chop in about 3 seconds I probably shouldnt have gone any more as it was a bit too chopped up for my liking.  Needed a bit extra in the oven, but tasted good, even the kidlets ate it tmrc_emoticons.)
