Apple Coconut Bites (12DSD)

Ingredients

  • 150 g dessicated coconut
  • 1 stick cinnamon, (or 1 tsp ground cinnamon)
  • 2 Green apples (large), Peeled, cored & quartered
  • 1 pinch sea salt
  • 40 g coconut oil

Recipe's preparation

    Make coconut butter
  1. Place 150g dessicated coconut in the bowl.  Stir on speed 8 for 10-15 seconds.  Scrape down sides of bowl and repeat until butter has formed.  Remove from bowl for use later.

  2. The main event!
  3. Add 1 cinnamon stick to the bowl and chop for 5 seconds on speed 8 or until ground to your desired consistency.

  4. Add the apples and a pinch of sea salt. In closed lid position Closed lid press turbo 3-4 times until apples are chopped to your desired consistency. (I think this is great with a few chunky pieces!).

  5. Add 40g coconut oil and cook for 10 minutes at 80 degrees on speed 1 Counter-clockwise operation.

  6. Add reserved coconut butter to the bowl and cook for a further 3 minutes at 80 degrees on speed 1 Counter-clockwise operation.

  7. Press mixture into the bottom half of a silicone muffin tray (only fill half way at the most).  Place in refridgerator or freezer (if you are impatient like me!) until set.  This recipe makes 10-12 bites depending on how thick you want them.

Tip

You will need silocone muffin trays for this recipe so you can peel them out and place in a container in the fridge. 

 

Keep them in the fridge or they will melt!!

 

This is a sugar free recipe, adapted from the 12 day sugar detox.
