  • 125 grams Butter
  • 125 grams sweetened condensed milk
  • 250 grams malt biscuits
  • 200 grams dried apricots
  • 1 tsp lemon zest, grated
  • 80 grams dessicated coconut, Plus extra for sprinkling

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add Malt Biscuits into Mixing bowl, blend 2 seconds, Speed 8.
    Set Aside in a large bowl.
  2. Add Apricots, Lemon, coconut - turbo4seconds.
    Add to biscuits.
  3. Add Butter and Condensed milk to mixing bowl. Combine 3 minutes, 100 degrees, speed 1 (until combined)
  4. Add biscuit mixture to mixing bowl and mix 5 seconds, speed 5.
    Repeat if required until well combined.
  5. Press into 20x30cm tin.
    Refridgerate for approx 1 hour.
  6. Ice with lemon icing and sprinkle extra coconut.
  7. Cut into Squares and serve.

Tip

You could use any dried fruit and icing flavour.
Instead of sprinkling second measure of coconut, try some chopped up nuts.
