Pastry
- 60 gram almonds
- 120 gram flour
- 50 gram Rapdura Sugar
- 115 gram Butter
- 1 teaspoon almond essence
Topping
- 2 apples
- 1 teaspoon cinnamon
- 1 tablespoon flour
- 30 gram Sliced Amonds
- 75 gram Rapadura Sugar
Cream Cheese Filling
- 250 gram cream cheese
- 1 egg
- 50 gram Rapadura Sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon almond essence
Recipe's preparation
Pastry Instructions
1. First mill amonds on speed 10 for 10 seconds.
2. Next add all the other ingredients for the pastry and put on "Closed lid" "Dough mode" for 20 seconds.
3. Use a greased 20cm round springform and spread the pastry.
4. Put in the fridge to set for 30 minutes.
Topping Instructions
1. Peel the apples and remove the core.
2. Slice the apples and put into a bowl.
3. Add all other ingredients and toss until well coated.
Filling Instructions
1. Add all the cream cheese filling ingredients and process on speed 3 for 15 seconds.
2. Spread the filling in the spring form.
3. Layer the sliced apples on top.
4. Bake on 180 degrees for approximately 40-50 minutes depending on your oven.

Tip
Depending on what fruit is in season you could also vary the fruit used in the topping so that it transforms it into a completely different cheese cake. Have fun experimenting and please let me know of any other great flavours you have tried.

Great recipe! Our family loves the combo of apple and cinnamon, and putting it in a cheesecake turns it into an impressive dessert. My boys aren't keen on almond essence, so I just subbed it with vanilla. Tasted great! I may just double the filling next time, to give it a bit more height. Thanks for sharing!

very easy to make. I would leave the almond essence out of the cheese filling as my family found the taste a bit overpowering.
