Banana Cake - No cane sugar

Banana Cake

  • 5 Bananas, ripe, peeled & roughly chopped
  • 1 tsp vanilla essence
  • 150 g DEXTROSE POWDER, The Sugar Break Up brand was used
  • 150 g Butter, room temperature/softened
  • 2 eggs
  • 300 g Self Raising Flour
  • 1/2 tsp bicarbonate of soda
  • 40 g Milk

Lemon Butter Icing

  • 100 g Butter, softened
  • 1 Cup of Dextrose Powder
  • juice of 1 lemon

Recipe's preparation

    How to make the cake:
    1. Preheat fan-force oven to 160 C (180C if not fan-force)
    2. Place bananas and vanillaessence in the bowl and mix for 5 seconds on speed 4. Set aside.
    3. No need to rinse out bowl. Add butter and dextrosepowder and mix for 20 seconds on speed 5.
    4. Add the eggs one at a time and combine each for a few seconds on speed 5.
    5. Return the banana mixture to the TM bowl and mix for 3 seconds on speed 5.
    6. Add the s/r flour, bicarbonateofsoda and milk and mix for 20 seconds on speed 5.
    7. Pour into a lined 20cm cake tin and bake in the oven for 1 hour. Pierce centre of cake with skewer and if cake mixture sticks to skewer, reduce the temperature to 140 C and cook for a further 10 to 20 minutes.
    8. Wait at least 10 minutes before turning out of the cake tin.
    9. Once cake is cool, you make the lemon butter icing.
  1. How to make the Lemon Butter Icing:
  2. Insert Butterfly into TM bowl. Put 100g of softened butter into TM bowl. Close lid and set for 1 minute on speed 4.

    Through the hole in lid slowly pour in the 1 cup of Dextrosepowder

    As soon as you've added the Dextrose powder, add the of juice of 1 lemon. If your minute has run out, set for another 10-15 seconds on speed 4 to incorporate the lemon juice.

    Once this is done, you can then ice the top of your cake and then eat! Enjoy!

Tip

Cake: After the 20 seconds has ended - check to see that s/r four, bicarb soda and milk have mixed well into other ingredients. If it hasn't, mix for another 10 seconds on speed 4 until it has.

Icing: The 1 minute is a guide depending on how fast/slow you pour, please check to make sure butter and Dextrose powder are well mixed. 

I used 5 bananas as I had 5 that needed to be used. You can try less 2-3 bananas instead - to keep fructose levels down.
