Banana coconut and nutella bread

  • 160 g plain flour
  • 150 g Self Raising Flour
  • 2 level teaspoons ground cinnamon
  • 1 level teaspoons bicarbonate of soda
  • 145 g brown sugar
  • 2 Over ripe bananas mashed
  • 165ml cans coconut milk
  • 115 g golden syrup
  • 60 gram peanut oil
  • 2 eggs

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Weigh flours, cinnamon, sugar and soda into bowl. Mix for 10 seconds, speed 5.
  2. Add all other ingredients except for nutella. 30 seconds at Speed 5.
  3. Add to a loaf pan double lined with baking paper.
  4. Swirl some nutella through the top.
  5. Bake at 180C for 1 hour and 10 minutes.
  6. Stand in pan for 10 minutes before turning out.


Swap peanut oil for olive oil and nutella for chock chips for a school safe nut free loaf.
