Banana, date and fig loaf - sugar & dairy free

Ingredients

  • 4-5 Ripe Bananas, broken into pieces
  • 6 medjool dates, pitted
  • 4 dried figs, halved
  • 400 g Fresh Apple Juice
  • 40 g Coconut oil in liquid form
  • 1 egg
  • 1 pinch salt
  • 300 g spelt flour
  • 90 g Shredded coconut
  • 10 g baking powder

Recipe's preparation

    Method
  1. Line a 30cm loaf tin & Preheat the overn to 180oC.

     

    Place all the ingredients except the flour & baking powder in the bowl & blend for 10 sec/speed 6 (or until its all mashed).

     

    Add the flour and baking powder and combine  20 sec/speed6 OR only until just combined! Overmixing makes it tough.

     

    Pour into prepared loaf tin and bake for 30min then rotate the tin and cook for 20-30min until a skewer inserted into the centre comes out clean.

     

    Remove from the oven, tip the loaf out onto a cooling rack and cool slightly.

     

    Serve with pure honey, almond butter and/or seeds of your choice.
