Banana Muffins (Gluten free, corn free, sulphur free, dairy free, nut free) BANANA MUFFINS (GLUTEN FREE, CORN FREE, SULPHUR FREE, DAIRY FREE, NUT FREE)

  • 5 portion ripe bananas
  • 25 g Maple syrup
  • 100 g coconut oil
  • 2 heaped tablespoons Flaxseed Meal
  • 100 g coconut milk
  • 1 tsp bicarb soda
  • 1.5 tsp Gluten Free Baking Powder
  • .25 tsp salt
  • 250 g buckwheat flour

Recipe's preparation

    BANANA MUFFINS (GLUTEN FREE, CORN FREE, SULPHUR FREE, DAIRY FREE, NUT FREE)
  1. Preheat oven to 180degree C.

    Using silicone muffin pans or Grease muffin tins with coconut oil

    Add coconut oil to bowl. Melt for 2 minutes 100 deg Gentle stir setting.

    Add bananas. Mix for 10 seconds speed 4.

    Scrape bowl and add remaining ingredients mix for 20 deveined speed 4, scrape bowl & repeat in 10 second segments until thoroughly mixed

    Pour into greased muffin tins and bake for 15 - 20 minutes or until golden brown and muffins spring back to the touch.

    Remove from pan and cool on wire rack.

    add honey, maple syrup, rice malt syrup to taste if a deeeter taste is desired. These were designed to be minimal added sweetness and suitable for young children.
