Banana oat loaf/muffins

Ingredients

1 portion(s)

  • 3 ripe bananas, peeled
  • 140 grams Milk (Any)
  • 100 grams Unrefined Sugar, I use coconut or Pamela/rapadura
  • 2 eggs
  • 300 grams Self Raising Flour, I use organic wholemeal SR
  • 45 grams oats, I use quick/fine oats if making muffins

Recipe's preparation

  1. Preheat oven to 160deg fan forced. Prepare loaf tin or muffin pans.

    break bananas into a few pieces and chop n TM bowl 8sec/speed 3.

    add milk, sugar and eggs into TM bowl and mix 10 sec/speed 3.

    adde flour and oats and mix on Counter-clockwise operation/20sec/speed 3.

    spoon into prepared loaf tin or muffin tins and bake approx 1hr for loaf or 20 mins for muffins (13-15 for mini-muffins)

Tip

I make this dairy free using rice or soy milk

I often add dark choc bits after flour/oats for my kids or almond slivers for adults
