Best "Banana" Pancakes Ever - According to Mr 7yr Old

Pancake Batter

  • 1 banana
  • 160 g Self Raising Flour
  • 185 g Milk
  • 1/4 teaspoon baking powder
  • 15 g caster sugar
  • 1 egg
  • 6

Recipe's preparation

    Creation of Masterpiece
  1. 1.  Place banana in bowl and mix for 10sec, speed 4.

    2.  Add remainder of ingrediants and mix for 20-30sec, speed 4.  Scrape sides of bowl and resume if needed until all ingredients are smoothly mixed together.

    3.  Heat non-stick fry pan and cook till golden brown each side.

     

    This makes 4 quite large pancakes which fills Mr 7yr old to the brim - but he does love pancakes!  The recipe from which this was adapted stated it makes 10-12 portions when spooning in 1-2tbs dollops.

Tip

Mr 7yr old loves his pancakes served with butter & golden syrup on top but you could use maple syrup, blueberries, choc chips, sprinkles etc.

    Made these for breakfast this morning as we had a couple of bananas lying around. These were gobbled you by my 22 month old and I! Delicious, super fluffy, not too sweet and filling. We doubled recipe but were just a little short of flour and milk, recipe still worked well. Thanks for sharing!

    i subbed regular milk with almond milk (intolerant) and added a teaspoon of vanilla essence.

    Served with maple flavoured syrup, just delicious!!

    this recipe was delicious, i doubled it like some others. i used brown sugar instead of caster sugar and added a drop of cinnamon essential oil (from a toothpick) before mixing again for 5 seconds to combine cinnamon EO. i fried them in butter so it got crispy around the edges, in pikelet size and it made heaps. Kids devoured these (drizzled with maple syrup). thanks for the amazing recipe!
