Tip

This recipe will double easily for a larger/higher cake

It’s also great for cupcakes. Single batch will make approximately 12-15 cupcakes. Cook for 12 – 15 minutes. Cupcakes are firm to touch when cooked

Add colouring for some party fun.

Or for a more sophisticated cake add some fresh or thawed berries

Use with one batch of Quick Chocolate Cake for a beautiful marble cake

    Fantastic for kids birthday cakes!
I love making my girls' birthday cakes so I always make a double batch, fill 12 patty cases with batter then the rest goes into a round cake tin.
Thanks so much for this recipe!

Hi. Has anyone tried to add ground almond to tge butter? If so, did you reduce any of the other ingredients? My friend likes bakewell tart and I’m trying to do a layer cake based on the flavours of the balewell tart (almond and raspberry). Thanks.

Great, easy butter cake recipe to whip up. It will be my go to recipe for my kids birthday cakes, especially because I can make it dairy and gluten free by using almond milk and nuttelex. I also cut down on the sugar and only used 100g. It tasted great.

Best cake ever. For some reason i read the recipe as 'place all indredients in bowl and mix', which i did. I also reduced the sugar down to 100g. It turned out lovely and moist, and was still good to eat 2 days after. I will continue to make it my one step way. This is going to be my go to cake for birthday cakes - perfect for the occasion.

Tasted good but a bit dry and didn't rise evenly. Bit disappointing especially as I made it as a birthday cake for my 1 year old granddaughter. I made 1.5 times the mixture after reading the comments and it really only rose in the middle and looked like a mountain.

I don't think I will be making it again.

Beautifully tasting cake great for birthdays! My husband asked me to reduce the sugar next time though particularly if being iced as well. Only issue was it didn't rise well in my 20cm round cake tin...I'd probably double the recipe next time to get a higher cake.

EASY TO MAKE AND IT TASTES GREAT !! This cake is super simple to make and tastes amazing. The perfect flavour for a vanilla butter cake (in my opinion). I layered mine up with buttercream in the middle and on top as I needed a bigger cake for what I was doing. I didn't try doubling the recipe, I just made 2 cakes

I added a punnet of strawberries, chopped into quarters, at the end and stirred on reverse for about 20 sec. It was delicious - a mild flavoured, but moist cake - perfect for the birthday girl who doesn't really like rich cakes. It took about 1 hour in my annoying oven.

Simple & quick! Very yummy- I sprinkled a handful of sultanas over the mixture just before baking. Next time I'll reduce the sugar a bit if adding extras.

I only had spelt flour on hand which worked well.
