  • 165 grams raw sugar
  • 125 grams Butter
  • 2 eggs
  • 5 grams vanilla essence
  • 230 grams Self Raising Flour
  • 125 grams Milk

Recipe's preparation

    Cake Batter
  1. 1.    Pre-heat oven to 180 degrees

    2.    Grease and line cake tin. Recipe will fill standard 20cm cake tin

    3.    Add sugar to the bowl. Mill for 10 – 20 secs speed 6

    4.    Add butter and mix on speed 3 for 2 – 3 minutes or until light

    5.    Add eggs one at a time until incorporated.

    6.    Add remaining ingredients

    7.    Mix on speed 6 for 1 minute or until mixture becomes smooth.

    8.    Pour into cake tin and bake in the oven for 45 minutes or until skewer comes out clean

    9.    Allow to cool

Tip

This recipe will double easily for a larger/higher cake

It’s also great for cupcakes. Single batch will make approximately 12-15 cupcakes. Cook for 12 – 15 minutes. Cupcakes are firm to touch when cooked

Add colouring for some party fun.

Or for a more sophisticated cake add some fresh or thawed berries

Use with one batch of Quick Chocolate Cake for a beautiful marble cake

    I've been using this recipe for years despite never commenting. It's extremely flexible. I use half wholemeal flour and cut the sugar down to keep it healthier for my kids. They are always requesting this for their lunchboxes and prefer it with a few handfuls of frozen raspberries sprinkled over just before baking. Thanks for a brilliant staple tmrc_emoticons.)

    I made this cake today, I made 1 dairy free using nutalex and almond milk and added a little almond essence and it was perfect I also made 1 gluten and dairy free and it also turned out perfectly! I will definitely be using this recipe for all my vanilla cakes thank you

    this recipe is the BEST. we use it for all of our kids birthday cakes, cupcakes for school and more. We do use cake flour instead of SR flour and it has a extra-soft crumb. Thanks for the best cake recipe i have found on here! Love

    Delicious and easy! Could easily pour it into two 20cm tins for a double tier. I cut mine in half, put jam, strawberries and cream in the middle and on top. Kids and adults alike raves about it!

    This is my go to vanilla cake. It always works out perfectly. I wrap a wet chux around the tin so it comes out level.

    Fantastic for kids birthday cakes!
    I love making my girls' birthday cakes so I always make a double batch, fill 12 patty cases with batter then the rest goes into a round cake tin.

    Worked really well as cupcakes, however I only got 12!! I used coconut sugar and also 40g of almond meal plus the rest of the plain flour a gluten free mix.
