  • 4 eggs
  • 230 g sugar
  • 230 g Butter
  • 230 g plain flour
  • 2 tbsp cornflour
  • 2 tbsp sherry
  • 1/2 tsp baking powder
  • 1 pinch salt

Recipe's preparation

  1. Preheat oven to 180 degrees C.  Line square or round baking tin with paper.

  2. Fix butterfly in thermomix bowl.  Add eggs and sugar, and whip 2 minutes speed 4.  Set mixture aside & remove butterfly.

  3. Without washing bowl, add butter and beat 1 minute speed 5.  Scrape down sides of bowl

  4. Add all remaining ingredients and the egg-sugar mixture to the bowl and mix 30 seconds speed 5.

    Pour into prepared pan and bake 45 minutes in moderate oven

  5. Set aside to cool 5 minutes in pan then turn to wire rack to cool completely.

    Can ice when cold

Tip

Great plain cake for birthday parties.  Cuts easily with few crumbs so good for kids shaped cakes.
