Caramel Seed Slice

Ingredients

Base

  • 250 g Macadamia Nuts
  • 100 g Desiccated Coconut
  • 15 g psyllium husks
  • 5 g Vanilla Paste
  • 7 medjool dates
  • pinch salt

Caramel

  • 8 medjool dates
  • 120 g almond butter
  • 5 g Vanilla Paste
  • 30 g honey
  • 1/4 tsp salt
  • 100 g coconut oil
  • 45 g water

Recipe's preparation

    Base
  1. Place the nuts, coconut and psyllium husk and process to crumb consistency 10sec/speed 5.

     

    Add the vanilla, dates & salt and combine 20sec/speed 7.

     

    Line a tine with greaseproof paper and evenly spread the mixture in the tin. Press down and put it in the fridge for 10-15min to set.

     

  2. Caramel
  3. Blend the dates, almond butter, vanilla, salt and honey for 1min/speed 7.

     

    Add the coconut oil and water and blend for a further 1min/speed7. (The mixure may split, don't be alarmed just continue to blend).

     

    Spread the caramel mixture evenly over the set base.

     

    Sprinkle with seeds of your choice. I use chia, sunflower and pumpkin seeds.

     

    Return to the fridge to set.
