Ingredients

Base

  • 125 grams Butter
  • 150 grams raw sugar
  • 90 grams dessicated coconut
  • 105 grams Self Raising Flour
  • 20 grams cocoa

Peppermint layer

  • 125 grams Butter
  • 250 grams raw sugar
  • 125 grams milk powder
  • 40 grams water
  • 3 level teaspoons Peppermint Extract
  • 3 drops Green Food Colour

Chocolate

  • 150 grams dark chocolate chips
  • 1 level teaspoons olive oil

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees. Line a slice tray with non stick baking paper.
    Melt butter 90 seconds at 60 degrees speed 1. Add all other ingredients and combine 30 seconds speed 3.
    Transfer mixture to slice tin and press firmly into tray using back of a spoon. Bake for 15 mins. Leave in baking tray to cool
  2. Peppermint filling
  3. Add all ingredients to mixing bowl and cook for 12 minutes, 100 degrees speed 3 MC off. Use simmering basket to avoid splatter.
    Scrape down bowl with spatula and cook for a further 4 minutes varoma speed 3. Immediately spread over slice base and allow to chill in fridge.
    Immediately rise bowl. You can add some water and dishwashing detergent and blitz on turbo to save washing up
  4. Chocolate
  5. Add chocolate and olive oil to mixing bowl. Melt 4 mins 60 speed 2.5
    Pour over Peppermint layer. Score when chocolate is almost set. Refrigerated until set. Slice and enjoy

    Delicious, not too rich and I adjusted peppermint dosage "to taste" as I didn't have "extract". Did across x2 silicone loaf pans for no baking paper and easier to store/slice. 😋

    Best peppermint slice I've had! Love the mint layer. Better texture than the old fashioned one. Like peppermint caramel! Definitely a keeper!
