  • 100 grams cashew nuts, Unsalted
  • 100 grams raw sugar
  • 150 grams plain flour
  • 130 grams Butter, Unsalted & Softened
  • 2 tsp Vaniila Extract
  • 50 grams Coconut

Recipe's preparation

    Cashew & Coconut Biscuits
  1. Preheat oven to 180 degrees, line a tray with baking paper or spray.

    Place cashews and sugar in bowl and mill 10 sec/ / speed 9

    Add coconut, plain flour, butter and vanilla into bowl with milled cashews and sugar and combine all ingredients on 1 minute  / locked lid / knead

    Remove mixture from bowl, roll into balls and place on baking tray, press down gently with a fork.

    Bake 20 minutes, until golden brown, remove from oven and wait 5 / 10 minutes to cool slightly, transfer onto a rack to finishing cooling.

    Delicious! I used gf flour, 80g honey and 90g coconut oil and added an egg to suit my families dietry requirements. They turned out very nice.

    Yum. Took some to work and they loved them.  Nice with some cranberries or sultanas added at the end on reverse. I used a half/half mix of buckwheat and spelt flour milled at the beginning.

    Thanks for this receipe. I swaped raw sugar for coconut sugar. Plain flour for spelt and also added a tablespoon of cocao to make the chocolate. They are yummy! My kids new lunch box treat Cooking 7
