  • 100 grams brown sugar
  • 105 grams Maple syrup
  • 1 egg yolk
  • 350 grams plain flour
  • 15 grams ground ginger
  • 15 grams mixed spice
  • 1 teaspoon bicarbonate soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chewy Christmas Gingerbread
  1. 1.  Cream butter, sugar, maple syrup and egg yolk on speed 3 for 1 minute.

     

    2.  Add flour, ground ginger, mixed spice and bicarbonate soda and mix on speed 4.5 for 1:30 minutes.

     

    3.  Use spatula to scrape down sides of your mixing bowl.

     

    4.  Turn out onto your Thermomat or on cling wrap and set in fridge for 30 mins.

     

    5.  After refridgeration, roll dough out to desired thickness and cut into shapes.

     

    6.  Bake in preheated oven at 150 degrees fan forced for 10 minutes.  Remove from oven and let cookies rest at room temperature before serving.

     

    7.  Enjoy!

    This was the third gingerbread recipe I tried from this forum and found this to be the best. The gingerbread was spot on. The gingerbread turned out absolutely delicious and was the consistency was the right balacne - chewy but not too soft or crumbly. I was so impressed with my own baking I even made a heap to give away! I quite like ginger so I added more than the the recipe requirements.

    Yes 15 grams is correct, however, if you like your gingerbread with a little less spice you could try using 5 or 10 grams tmrc_emoticons.)

    This recipe is amazing, I made this recipe using gluten free flours and Wow! They turned out perfectly. So perfectly that I baked them Christmas Eve and Christmas day they were all gone and I've had requests to make them again . Thank you so much for this recipe . My Family and extended family have voted it best gingerbread ever.

    Has anyone else found this recipe uses 3/4 a jar (15g)  of ground ginger? This seems really excessive? Unsure if correct as most recipes are a few teaspoons.
