Choc Banana Oat Energy Balls

  • 115 g banana, Mashed (approx 1 medium banana)
  • 160 g rolled oats
  • 60 g dessicated coconut
  • 2 tbsp Flaxmeal, (ground flaxseed)
  • 2 tbsp chia seeds
  • 65 g Peanut Butter
  • 80 g Maple syrup, or honey
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt, (omit if your peanut butter already has salt)
  • 65 g dark chocolate chips
  • 1 tbsp cocoa powder

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Mash banana in TM bowl - 30secs, Speed 4.
  2. Add all remaining ingredients. Mix - Speed 3 for about 20-30 seconds, until the ingredients come together into a sticky dough. Scrape down the sides if needed.
    (If the dough is too sticky, you can add an extra 20g of rolled oats to adjust the consistency. The dough should be easy to roll into a ball, not too wet).
  3. With wet hands, roll tablespoon-sized portions of the dough into
    balls and place them on a plate lined with parchment paper. (If mixture isn't holding, place it in the fridge for 10 mins).
  4. Place balls in fridge or freezer to firm up. They'll hold their shape after a few hours and can go into lunchboxes without losing their shape or going soft.

Tip

After a couple of hours in the fridge they'll hold their shape beautifully. They can go in lunchboxes and will stay firm.
