      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Preheat the oven to 160°C. Line two baking trays with baking paper
  2. Place ingredients into the bowl in the following order:
    - Plain Flour
    - Custard Powder
    - Caster Sugar
    - Cold Butter (chopped into approx 3cm x 3cm pieces)
  3. Mix for 10sec/speed 6
  4. Knead 40sec/Dough mode (Mixture will be breadcrumb consistency)
  5. Roll 2-3 teaspoons of dough together into a ball. It should measure around the size of an olive. Place the balls onto the prepared trays.
  6. Press a chocolate freckle into the top of each cookie, pressing down to flatten into a cookie shape.
  7. Place in the oven and cook for 12-15 minutes until lightly brown around the edges. The cookies should move slightly on the tray when touched.
  8. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
  9. Store in an air tight container for up to 3 days (if they last that long!)

Tip

Chocolate melts can be used in place of freckles if you prefer.
If you don't have custard powder you can substitute the following options:
- Cornflour
- Rice Flour
- A mixture of custard powder, cornflour and/or rice flour
- Self Raising Flour (However the mixture won't be as "short" and "crumbly" as normal)

    Really crumbly making it difficult to roll them, when pressing the freckles on top some of the biscuits fell apart. Kids enjoyed eating them though my daughter said they are very sweet.
    probably won’t make again.
