Ingredients

Cupcakes

  • 60 g Dark eating chocolate
  • 150 g water
  • 90 g Butter (Softened)
  • 220 g brown sugar
  • 2 eggs
  • 100 g Self Raising Flour
  • 30 g cocoa
  • 40 g almond meal

Chocolate ganache

  • 100 g milk eating chocolate
  • 60 g cream

Recipe's preparation

    Cupcakes
  1. 1. Put chocolate and water in TM bowl and melt for 2 min, 50 degrees at speed 2. Transfer to seperate bowl.

    2. Add butter, sugar and eggs to TM bowl and mix at speed 4, 1 min.

    3. Add remaining ingredients to TM bowl and mix for 10 seconds, speed 5.

    4. Pour mixture into paper muffin cases. Bake for 25 min at 150 (fan forced oven).

  3. 1. Put chocolate and cream in TM bowl. Melt for 2min , 50 degrees at speed 2.

    2. Allow ganache to cool until spreadable.

Tip

I sometimes add a rolo into the mixture prior to baking to make a Chocolate Fudge Mud Cupcake.

    I could eat this batter by itself! It's amazing!! Made it numerous times as cupcakes, and they are perfect!! I'm just about to do it as an 8 inch cake...will post how it turned out 😊

    OMG will not use any other recipe. Super easy and the best mud cake I think I have ever eaten. I too used sour cream instead of pure cream in the ganache. Was just the right amount of sweet! Thank You for the recipe
