Chocolate Muffins

  • 250 g plain flour
  • 225 g raw sugar, (also called Granular sugar)
  • 35 g unsweetened cacao powder
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla essence
  • 20 g Cider Vinegar
  • 75 g safflower oil
  • 250 g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 180C

     

  2. Place dry ingredients in mixing bowl. Mix 50 seconds Counter-clockwise operation speed 3.  Scrap down sides of bowl and mix 20 seconds speed 3

     

  3. Add wet ingredients.  Mix 30 seconds Counter-clockwise operation speed 3.  Scrap down sides of bowl and mix a further 30 seconds speed 2 1/2.

     

  4. Pour batter into individual muffin trays

     

  5. Place in oven and cook for 18 minutes at 180C (fan forced oven)

     

  6. Once cooked, remove from oven, leave to sit in muffin tray for 5 minutes, then place on cooling rack

    I used gf flour, a lemon instead of the ACV, 60g rapadura sugar & about 60g honey. Not too sweet, and super tasty and fluffy!!

    I used gluten free flour as my husband can't have normal flour, I think they would taste better with melted butter as they didn't have a lot of taste. Otherwise they were good.

    Lovely tasting ..... thanks for sharing this recipe, a nice chocolate tasting muffin- this as well, will be my easy to go recipe...I did the suggestion by a commenter of placing all wet and dry in at once, and no problem at all with end result 🥂

    I have made these twice now, the second time I just put all the ingredients into the jug all at once (wet and dry) and mixed on Speed 6 for 30 seconds. Taste just the same and much quicker tmrc_emoticons.)
