Chocolate Zucchini Cake

Ingredients

30 portion(s)

  • 200 g zucchini
  • 90 g Butter
  • 1 tsp Orange rind
  • 230 g caster sugar
  • 2 eggs
  • 190 g SR flour
  • 15 g cocoa
  • 1/2 tsp cinnamon
  • 60 g Milk

Recipe's preparation

  1. Grate zucchini 3 secs/sp 7.  Set aside.

  2. Cream butter, orange rind and sugar 30 secs/37 deg/sp3.

  3. With motor running at sp 3, add eggs one at a time through hole in lid, beating for a few seconds in between.

  4. Add flour, cocoa, cinnamon, milk and zucchini, mix 20 secs/sp5.

  5. Pour into lined cake tin and bake for about 30 mins at 180 deg.

Tip

1: I used a 22cm x 22cm cake tin, which made quite a flat cake.  For a deeper cake use a smaller square tin, or a loaf tin (approx 25cm x 10cm).

2: Ice with buttercream or chocolate icing for an extra treat.

    I have made this cake several times and it's great! Made with butter cream icing. NeXT time trying with cream cheese icing.

    Has anyone frozen this cake before? I want to know if it's suitable for freezing please? Want to make bday cake ahead of time!!

    Reduce sugar to 180g, could have reduced it more, I will next time.  I had 10 different people try it and absolutely love it.  thanks for a great recipe.

    Just made these into 26 cupcakes and they worked out beautifully. I also reduced the sugar to 150g. Very yummy Choc/Jaffa cupcakes. Will definitely be making again tmrc_emoticons.;)

    This is FANTASTIC!! My kids all loved it, had no idea there was zucchini hiding in there. It has a really nice jaffa flavour and is lovely and moist. Will make this one again for sure.

    Great texture, lovely and moist. Served it while still warm with choc fudge sauce and icecream (compliments the Jaffa taste wonderfully), and then let it cool and served without adding topping - yum.

    Love love love it! Moist and tasty. Kids had NO idea it was good for them! I reduced the amount of sugar and swapped about 40 grams for Stevia. Worked a treat!
