- 1 medium zucchini
- 2 eggs
- 45 gram coconut oil melted
- 60 gram honey
- 20 gram cocoa
- 125 gram almond meal

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- preheat oven to 170 degree
grease 24 mini muffin pan
Cut zucchini into 3 pieces and place in mixing bowl, chop for 2 sec/speed 5, scrape down bowl and repeat - empty onto paper towel and squeeze out excess fluid, place back in bowl with butterfly in bowl
- add remaining ingredients and mix 6 sec/speed 4, scrape down bowl and repeat.
- add batter to mini muffin tray, filling cups
- place in oven for 10-12 min or until muffin springs back to touch
- remove from oven, allow to cool for 5 minutes then place muffins on cooling wrack to cool completely
- can be served with ice cream or cream as a dessert or on its own as a healthy lunch box treat.

Tip
if using whole almonds, add almonds to bowl and chop 10 sec/speed 9, set aside
