  • 250 grams Mixed Nuts, 50g reserve for topping
  • 3-4 Medium ripe bananas, broken into pieces
  • 80 grams Butter, cut into approx. 3cm pieces
  • 100 grams Coconut sugar
  • 2 large eggs
  • 1 teaspoon Bi Carb of Soda
  • 1 pinch salt
  • 200 grams Plain Wholemeal Flour
  • 50 grams Desiccated Coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Pre heat oven 160 °C. Grease and line a bread loaf tin

    Roast nuts and coarsely mill nuts – 3sec/Speed 5.

    Transfer nuts to another bowl to use later. Reserve 50g for topping.

    Without cleaning bowl add butter and melt - 2mins/60 °C/Speed 1.

    Add bananas and coconut sugar and mix – 10sec/Speed 4.

    Add eggs and beat – 20sec/Counter-clockwise operation/Speed 4

    Add Bi carb of soda and a pinch of salt and mix – 3sec/Speed 4.

    Add 200g nuts, coconut and flour and mix – 5sec/Counter-clockwise operation/Speed 4.

    Pour mixture into lined tin and top with reserved nuts.

    Bake for approx. 60mins at 160 °C.

     

    Leave in the tin to cool.

Tip

Don’t over mix when flour is added.

Depending on your oven, it may require additional cooking time. Test by inserting a skewer and it should come out clean.

Can be toasted and served with butter.
