- 250 grams Mixed Nuts, 50g reserve for topping
- 3-4 Medium ripe bananas, broken into pieces
- 80 grams Butter, cut into approx. 3cm pieces
- 100 grams Coconut sugar
- 2 large eggs
- 1 teaspoon Bi Carb of Soda
- 1 pinch salt
- 200 grams Plain Wholemeal Flour
- 50 grams Desiccated Coconut

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Pre heat oven 160 °C. Grease and line a bread loaf tin
Roast nuts and coarsely mill nuts – 3sec/Speed 5.
Transfer nuts to another bowl to use later. Reserve 50g for topping.
Without cleaning bowl add butter and melt - 2mins/60 °C/Speed 1.
Add bananas and coconut sugar and mix – 10sec/Speed 4.
Add eggs and beat – 20sec//Speed 4
Add Bi carb of soda and a pinch of salt and mix – 3sec/Speed 4.
Add 200g nuts, coconut and flour and mix – 5sec//Speed 4.
Pour mixture into lined tin and top with reserved nuts.
Bake for approx. 60mins at 160 °C.
Leave in the tin to cool.
Don’t over mix when flour is added.
Depending on your oven, it may require additional cooking time. Test by inserting a skewer and it should come out clean.
Can be toasted and served with butter.
