For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place butter and sugar into TM bowl and beat until its is light and creamy. I’d say 3min/speed 3.5. Scrape down and repeat if necessary.
  2. Add egg and mix for 20secs/speed 2.
  3. Add dry ingredients, except extra sugar, and mix 45 secs/speed 3.5 until combined. Scrape down sides and final mix 15 secs/rev/speed 3.5.
  4. Remove mixture into another bowl (so you’re not scraping a metal spoon around inside your thermie bowl)
  5. Roll teaspoons full of the mixture into balls, dip the top in the extra castor sugar and place on a lined baking try, about 5 cms apart, to allow for spreading.
  6. Bake in a moderate oven (180 degrees) for 10 minutes until risen and just golden.

Tip

I place some on a small tray or plate and pop them into the freezer until firm. Then I remove and transfer to a ziplock bag or container and store them in the freezer until you need something homemade in a hurry - just pop them into your preheated oven, straight from the freezer.
