Coconut Pikelets Gluten Free

Ingredients

24 piece(s)

  • 440ml can coconut milk or coconut cream
  • 350 g gluten free flour self raising
  • 1 tbsp sugar
  • 2 eggs
  • 125 g water
  • 2 tbsp Butter

Recipe's preparation

  1. Place all ingredients except butter in bowl. Mix 15 seconds speed 5.

    Heat non-stock frying pan or griddle and add half the butter to melt, covering entire surface. Pour a small amount of mixture in and cook on medium heat til bubbles appear. Flip and cook til lightly browned. Repeat til all mixture is used, using butter as required.

    Serve warm with maple syrup and fresh fruit such as banana, or even left over custard with honeydew melon or fresh berries.
