Date, Apple & Cinnamon Muffins

Ingredients

12 portion(s)

Muffins:

  • 250 gram raw almonds
  • 10 medjool dates, pitted
  • 2 apples, cored and quartered
  • 3 eggs
  • 40 g Butter
  • 1 teaspoon Vanilla Essence/Extract
  • 1 teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • pinch salt

Recipe's preparation

    Muffins:
  1. Preheat oven to 175c and grease a 12-hole muffin tin, or put silicon cupcake moulds onto a tray.


     


    Add almonds to bowl and grind for 10sec/speed 9. Set aside.


     


    Add dates to bowl and chop 5 sec/speed 5.


     


    Add apples to bowl and chop 3 sec/speed 6.


     


    Add remaining ingredients to bowl, including reserved almond meal and mix for 10 sec/speed 4.


     


    Divide the mixture among your muffin tin or cupcake moulds. Bake for 20 mins, or until golden and a skewer inserted comes out clean.

    Very nice! I'm not a big fan of muffins, so I made it in a 20X20cm slice tin and it is just as nice. Obviously had to bake it a bit longer.

    YummTongueDidnt have medjoool dates either. Used ordinary dates- still amazing taste and healthy snack for the family. Will try other tips suggested, coconut oil instead of butter. Thanks for sharing.

    Subbed some hazelnuts for almonds in these muffins. Beautiful way to use up apples. Although they all cooked at different times, they were almost fudgy. I cut into quarters for muffin bites, beautiful with a cup of tea tmrc_emoticons.)

    Delicious! Only had one apple and pitted dates of which I used 20. I followed the rest of the recipe as is. Next time I might try and sub the butter out and a banana in. Thanks for a lovely healthy sweet recipe.

    Really nice, not too sweet. I don't use medjool dates as they are too expensive, but I use regular dried dates and throw a few extra in. I used 3/4 of the almond and the rest buckwheat. I forgot to 'set aside' the almonds and buckwheat and it was still delicious! Very tasty and thanks!

    It comes out beautifully moist and still quite sweet.
