Delicious wholesome Raisin Bread

Delicious Wholesome Raisin Bread

  • 250 g water
  • 2 heaped tsp yeast (dry)
  • 380 g Wholemeal Bakers Flour
  • 60 g Coconut sugar
  • 1.5 level tsp cinnamon
  • 1 level tsp salt
  • 1 level tbsp Mesquite Powder, optional
  • 100 g raisins
  • sunflower seeds, to sprinkle on top

Recipe's preparation

    Delicious Wholesome Raisin Bread
  1. Place water and yeast into mixing bowl and heat 1min/37c/sp1

    Add flour/coconut sugar/cinnamon/salt and mesquite powder and      knead 1.5 min

    Transfer dough and wrap in the ThermoMat.Allow to prove for 30 min or until doubled in size.

    Preheat oven to 220c

    Add raisins to the dough and mix quickly through with your hands and tranfer into a loaf tin lined with baking paper.

    Wet your hands and gently pad down on the loaf and sprinkle with sunflowerseeds

    Bake for 10 min at 220c and then lower temperature to 180c and bake for another 20 min.

    Remove from the loaf tin and let it cool before serving.



Mixed spice and fruit peel can be added in step 2 if desired.

And an alternative sugar (raw/rapadure) can be used for a much sweeter option.
