Ingredients

BAKE PLAY SMILE 'THE ULTIMATE DOUBLE CHOCOLATE CHIP COOKIES

  • 250 g Butter
  • 100 g brown sugar
  • 220 g caster sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 250 g plain flour
  • 70 g cocoa powder, 70% cocoa
  • 1 tsp bicarbonate of soda
  • 1 pinch salt
  • 200 g White Chocolate Chips

Recipe's preparation

  1. Preheat oven to 180 degrees celsius (fan-forced). Line two large trays with baking paper and set aside.
  2. Insert the butterfly and add the softened butter (chopped), brown sugar and caster sugar. Mix on Speed 4, 30 seconds or until smooth and creamy.
  3. Reduce to Speed 2 and add the eggs, one at a time, through the MC hole.
  4. Add the vanilla extract and return to Speed 4 for a further 10 seconds.
  5. Remove the butterfly and add the plain flour, cocoa powder, salt and bi-carb soda. Mix on Speed 5, 20 seconds.
  6. Add the chocolate chips and mix on Reverse, Speed 4, 10 seconds.
  7. Place the dough into the fridge for 30 minutes to chill (see notes).
  8. Roll heaped teaspoons of the mixture into balls and press down slightly. Place 5 cm apart on the baking trays.
  9. Bake for 8-10 minutes or until just set (see note). Allow to cool for 10 minutes before carefully transferring to a wire rack to cool completely. Store in an airtight container at room temperature for up to a week.

    These are the best cookies I've ever made!
    I love 'Bake play smiles's' website and have made lots of her recipes including the 100 cookie recipe but this is superior by far.
    'I'm not a massive fan of choc (cocoa) cookies but my son requested some and I'm so glad I made them. I used 100g of white choc chips and 100g of chopped macadamias and they turned out perfect.
    I used a tablespoon size scoop and got about 40 good size cookies for this recipe.
    Highly recommend!
