  • 90g Butter, Cold, chopped
  • 1/2 cup brown sugar
  • 1 cup plain flour (sifted)
  • 2 eggs
  • 1/2 cup brown sugar, firmly packed
  • 1 drop vanilla extract
  • 1/4 cup plain flour (sifted)
  • 2 pinch baking powder
  • 2 cups dessicated coconut

Recipe's preparation

    DREAM BARS
  1. Line slice tin with baking paper.  Preheat Oven to 180degrees.

     BASE:    (FIRST 3 INGREDIENTS)     Mix first lot of butter and sugar 10 to 20 sec on speed 5.  Add first lot of flour - 10 sec on speed 3, scrape down sides with spatula, then a further 10 seconds on speed 3. 

    Press mixture into tin, bake for 10 mins.  Remove from oven.

    TOPPING    Whip eggs and sugar on speed 8 for 30 seconds.  Add the rest of the ingredients (FROM THE SECOND LOT OF SUGAR DOWN) - mix on speed 3 for 10 secs.

    SPREAD TOPPING OVER BASE.  BAKE A FURTHER 20-25 MINS UNTIL GOLDEN BROWN. 

    COOL IN TIN.  CUT INTO LARGE SQUARES, SMALL SQUARES OR BARS

    Made these today as I found a jar of fruit mince in my pantry.  Very easy to make.  Would be perfect served warm with a dusting of icing sugar with custard, cream, ice cream or all three for dessert.  tmrc_emoticons.-)

    Made for Xmas instead of the traditional mince pies. Were definitely a dream - so yummy and very easy. Didn't have enough brown sugar so used raw for the topping
